Pink Pearl by Olivier E. has officially opened at the JW Marriott Phu Quoc Emerald Bay Resort and Spa in Vietnam. Under the guidance of Michelin-starred chef Olivier Elzer, the restaurant introduces a fresh perspective to the culinary scene in Phu Quoc, drawing inspiration from Mediterranean cuisine and his over thirty years of culinary experience. Located along the stunning coastline of Phu Quoc Island, the design is inspired by the fictional 1920s socialite Pearl Collins. The interior, crafted by architect Bill Bensley, features luxurious details paired with soft tones, creating an elegant and comfortable dining atmosphere.

Olivier Elzer, trained under culinary legends Pierre Gagnaire and Joël Robuchon, boasts an impressive portfolio with 27 Michelin stars acquired throughout his career. He has overseen hotel dining establishments and founded his own brand of restaurants across various cities in Asia and Europe. At Pink Pearl by Olivier E., he infuses his innovative twist on French cuisine by featuring seafood from the stunning French Riviera and local ingredients. Guests can savor a selection of signature dishes, including charred bonito served with endive salad and Comté cheese, octopus with hummus and pomegranate, and a slow-cooked Bohémienne stew made with eggplant, tomatoes, and Parmesan cheese, showcasing the delicate flavors of French home cooking.

The restaurant offers both a five-course and a seven-course tasting menu, allowing guests to savor the intricate layers of Mediterranean-inspired French cuisine. On Sundays, a brunch is launched, giving patrons the chance to enjoy leisurely moments with stunning sea views while immersing themselves in Olivier Elzer’s culinary philosophy. The restaurant’s wine list, curated by sommelier Bertrand Lutaud, who has worked at several Michelin-starred establishments, features a selection of fine wines from around the globe, further highlighting the depth and flavor of each dish.
