Mott 32, the upscale Chinese restaurant located in the Standard Chartered Bank Building in Central, has been one of Hong Kong’s most popular fine dining establishments since its opening in 2014. It has evolved into one of the world’s most internationally recognized Chinese brands, reinterpreting the essence of Chinese cuisine through a modern lens while remaining deeply rooted in traditional culture. The culinary direction of the brand is envisioned by the founding team of Maximal Concepts and is led by Master Chef Li Wenxing, the group’s executive chef specializing in Chinese cuisine. As one of the most respected Chinese chefs in the local culinary scene, Chef Li combines over 35 years of experience with a blend of traditional techniques and modern dining philosophies, steadfastly focused on the essence of ingredients. The flagship store in Central continues to serve as the creative core and source of inspiration for the brand.

One of the stars of this upgraded menu is a reimagined signature dish — 42Roasted Peking Duck from Tianchi (Applewood Smoked)served with premium black fish roe sauce.. Building on the classic applewood roasted Peking duck from Sànsù Jū, it presents a more luxurious version. The chef has handpicked the eight prime cuts of the whole Peking duck — ensuring a perfect balance of crispy skin, fragrant fat, and tender meat. Each piece of duck is artfully wrapped by hand and garnished with caviar, creating an instant indulgence that requires no effort from guests, making it both convenient and sophisticated. The remaining duck meat is served in the traditional style, accompanied by homemade pancakes and condiments, preserving the classic flavors.

Another upgraded return of the Applewood Smoked Black Hair Pig Char Siu, the char siu is smoked using apple wood and served table-side with a special wooden box — a wisp of light smoke drifts, filling the air with fragrance. This layer of smoky aroma enhances the caramel sweetness of Yellow Mountain honey, deepening its flavor.

Other recommended dishes include Herbal Tea Duck with Yuzu Salad, which beautifully blends the essence of Sichuan cuisine with a modern twist. It features duck breast smoked with camphor wood, paired with fresh seasonal vegetables, juicy berries, nuts, and a lemon honey glaze that creates a perfect balance of smoky, sweet, and tangy flavors. Additionally, Osmanthus Honey Crispy Eel Balls showcases a sauce made from Huangshan honey and homemade osmanthus petals, infusing the dish with an elegant touch, delivering a crisp sweetness and a lingering floral aroma.
